MOONG DAL-CUCUMBER-PEANUT MEDLEY (Kosumbari)

Hesaru bele-Soutekayi-Peanuts Kosumbari:

Excellent, crunchy ,tasty ,cool cucumber side dish/salad on a hot summer day! Use fresh young tender cucumber. Enjoy!

You Need:
2 Cups Cucumber cubed
2 tsp Moong Dal, soaked in water for 2 hours and drained (Yes! use it raw)
1 tbsp Spicy Peanuts crushed
1 tsp Cilantro
Salt and some sugar (optional)
1 tsp Lemon Juice
1 tsp Dry Grated Coconut

TEMPER:
1 tsp Oil
1/2 tsp Mustard Seeds
2 Curry Leaves
1 Fresh Green Chilly,slit

To make:
1. Mix all the above ingredients from cucumber to salt.
2. Heat oil for tempering, add the ingregients given and then pour in the temperings.
3. Serve chilled.
