SAGO (TAPIOCA FRITTERS) VADA & MINT CHUTNEY

Sago Vada!! Who dosen't like it,right?!Make a wonderful snack on a cold day with coconut and mint chutney to go with it,Mmm..!! I followed the recipe from a cook book, of course with some additional ingredients to make it to suit my taste. It came out better than I expected and very delicious. Tastes almost like Uttappam and better served immediately after frying, as it tends to be little chewy once it's cold!!

Sago Vadas:
I have used smaller variety of Tapioca in this recipe, probably a quick cooking one too, I am not sure! I usually take it out of the box and store the Tapioca in a glass jar. When soaking for 2-4 hrs, depending on the quality of Sago you have, make sure they are soft to touch before cooking. Serve with mint chutney.

TO MAKE SAGO VADAS YOU NEED:
1 Cup Sago(Tapioca)or Sabudana
1 small cooked and mashed Potato or 1/4 cup Potato flakes(Optional)
1/2 Cup Plain Yogurt
3/4 Cup Plain Flour
1/2 Cup Rice Flour
2 tsp Cumin Seeds
2 tsp Sesame Seeds
2-3 Green Chillies chopped
1-2 Onion chopped
1/2" ginger minced
1/2 tsp Baking Soda
Curry Leaves
Salt

METHOD:
1. Wash several times until water runs clear, and soak Sago in yogurt and water only if needed just enough to cover it for 2-4 hours or until soft depending on the type of Tapioca you have.If Sago is of bigger grain , soak longer.
2. After it is softens and thickens,add all the other ingredients given above and mix ,adding little water only if needed to make a very thick batter.
3. Take a lemon sized balls on your palms,flatten thin like cutlets.
4. Heat oil to 375F, drop the cutlets gently and deep fry.
5. Drain on paper towels and serve with mint chutney.

COCONUT-MINT CHUTNEY:
Mint Chutney can be relished with any kind of savory snacks and very easy to make in a jiffy.


You Need:
1/4 Cup Fresh or dry Coconut
1/4 Cup cilantro
1/8 Cup Mint Leaves
2-3 Fresh Green Chilies
1/2 Cup Plain Yoghurt
Curry Leaves
1 Garlic
Salt
To Temper:(Optional)
1 tsp Canola Oil
1/2 tsp Mustard Seeds

METHOD:
1. Grind all the above ingredients to a smooth paste.
2. Heat oil, add mustard seeds, when they pop add to the chutney.
3. Serve with a glass of Minty Vanilla Yogurt Lassi or chilled soft drinks!!

NOTE: You can skip the coconut if you like or reduce the amount and just make chutney with other ingredients increasing the amount of cilantro and adding 1/2 tsp of lemon juice too to keep it from turning dark.

Hi Priya.Yes,usually Sagos are used to make payasa and dessert items.But it also make a great savory vadas too.Hope you will try this snack.Promise you,you will love it!:))

Wadas thumba chenagide, i knew there was a recipe adding yogurt but never knew how to! thanks for the recipe hege iddilinu madthare i would try this version next.

We use sago to make sweet dishes, never knew it could be used in vadas, seems delicious though !

ash, love those vadas and cool minty lassi. what more do we need on a hot summer evening. somehow my sabudana vadas are never crispy.

Reena,these were very crispy when fresh out of the fryer!Try this way next time,may be it will works for you:)
After it cools down,they do become a little soft but you can crisp them up again in the Oven at 300F for 10mins.Hope you try.
