JACK(FRUIT) IN THE BOX!!


Here is my post for JFI founded by Indira of 'Mahanandi' and being hosted this month by Bee of 'Jugalbandi' with the theme of "Jackfruit". A very special thank you to Bee from me for hosting and for making sure to leave a "thank you" comment for EVERY entry she receives, a great blogger/host etiquette if you ask me! We are all so busy in our own way but still manage to cook for these events.Least we could do as hosts is to take few seconds to appreciate the effort of each blogger who contributes!So, thanks Bee:))



Jackfruit tree with Jack fruits and raw sliced Jackfruit:



The Jackfruit is believed to be indigenous to the Western Ghats of India.It spread early on to other parts of India, southeast Asia, the East Indies and ultimately the Philippines.Jackfruit grow well in humid tropical and near-tropical climates.Jackfruit is the largest tree-borne fruit in the world, reaching 80 pounds in weight and up to 36 inches long and 20 inches in diameter!Jack fruits mature 3 to 8 months from flowering.When mature, color changes from light green to yellow-brown.When cut,you get a white sticky glue like strings,it is easy to get around those if you dip your fingers in oil before you try to cut the fruit.Usually,you get the raw and ripe Jackfruit cans in Asian stores to save all that trouble!Raw slices are used to cook delicious curries,fries,in Biryanis etc.Ripe ones you can eat as they are or use them to make dessert.Enjoy!!:))

Alright! On with the business.Thanks to the selection of Jackfruit for JFI,I had to drive around 3 cities like crazy woman looking for Jackfruit in any shape or form!!:D I hadn't eaten Jackfruit since I left India,so it was a delight to get at least canned ones here in Asian stores.Of course,it doesn't tastes anything like the real thing but beggars cannot be choosers!!:))

On the Menu this week:

Kathal Kababs and Kathal fries,
Mysore Grandma's Halasinakayi Palya,
North Indian Dahi Kathal,
and for dessert, delicious Halasinhannu Dosas with coconut and honey!


Kathal Kababs and Kathal fries:

Jackfruits are called Kathal in Hindi and Halasinakai in Kannada.I am sure every state in India has it's own name for this fruit too.I used canned drained Raw Jackfruit pieces for making these Kababs and crispy fries as appetizers.

To Make Kababs:
Ingredients: 1 can of raw Jackfruit, 1 small minced onion, 1" ginger, 2 tsp each of coriander seed powder and cumin seeds powder, salt to taste, 1/2 tsp dry red chilly flakes, 1 tsp fennel seeds, 1 cardamom, 2 cloves, 1/2" cinnamon, some mint leaves, just enough Besan/Chick pea flour to mix.
Enough oil to fry.
How to:
1. Cut raw Jackfruit into small pieces, and put all of the above except Besan into a blender and process into a coarse mixture without adding water.
2. Take it out in a bowl, add 1-2 or more tbsps of Besan and mix everything gently into a firm dough.Don't add too much Besan!
3. Divide into 6-8 portions and roll them to make 1" thick and 3-4" in length tube-like kababs.
4. Heat some oil in a pan on medium heat and shallow fry or deep fry until it is golden crisp on all sides.
5. Serve with ketchup or hot sauce, lettuce, tomatoes ,cilantro and lemon slices.
Crispy Kathal Fries:
Same batter for coating works for Chicken Drusticks too! Makes a very crispy coating when eaten fresh off the fryer.
Ingredients:1/2 cup rice flour, 1 can drained, dried jackfruit pieces, 1/2 tsp chilli powder, salt to taste, 2 tsp cornstarch, 1/2 tsp each ginger and garlic powder, 1/4 tsp gram masala, 1/8 tsp baking soda, and 1/8 tsp of turmeric powder, enough oil to fry.
How to:
1. Take a bowl, mix all the above except the jackfruit, adjust the salt and the chilly to your taste, with just enough water to make a thickish batter.
2. Heat oil to 375 F.
3. Dip jackfruit pieces, 4-6 at a time to coat somewhat thickly with batter and drop them carefully into the oil making sure they are separate.
4. Fry until golden,crispy and drain on a paper towel.
5. Serve with ketchup or hot sauce.If you want reheat them,bake them in the oven at 400F for 10mins to crisp them up again.

Raw Jackfruit Gravy:
HalasinaKai Palya as we call it.This tasty recipe is from my Mysore grandmother(always think vegetarian and coconut!:D).You can also add some cooked brown chana(Kadalekalu) to make it more nutritious(I didn't have them on hand) and tastes excellent with Rice rottis.


Ingredients: 1 can raw jack fruit pieces,1 small chopped onion,1/4 cup Chana dal, 1 tsp mustard seeds, 2 tsp urad dal,few curry leaves.
To dry roast and grind Masala: Roast 1 tbsp coriander seeds,2 dry red chillies,1/2 tsp peppercorns,1 onion chopped and fried until reddish,1/2 tsp roasted methi seeds, and grind these with 1/4 coconut,2 tsp Jeera, 1/4tsp turmeric,1 garlic, a small piece of tamarind until smooth,keep it aside.
How to:
1. Heat 1 tbsp oil,add mustard seeds,Urad dal,curry leaves,chana dal and onion,fry until reddish.
2. Add Jack Fruit pieces into the pan,1 cup water, cover and cook until chana dal is cooked and soft.
3. Turn down the heat,add ground masala,salt and cook until it's thick.Add cilantro and a 2tsps of ghee to it.
4. Tastes great the next day. Serve with any rice dish or Parathas,best with Rice rottis.

Dahi Kathal:
Dahi is Yogurt in Hindi and mixed with spices,dahi kathal is delicious with Parathas.Although this recipe is vegetarian,you could add chicken to this dish to make an excellent side dish with rotis or rice.


Ingredients: 1 can Jackfruit pieces drained, 1 cup yogurt,1/4 tsp turmeric,1/4 tsp pepper pd,1 tsp garam masala.
1 large onion finely minced, 2 green chillies, 1-2 garlic cloves ground with 1" ginger,cilantro.
How to:
1. Heat 1 tbsp oil/ghee,add minced onion and fry until the onions are soft and whitish.
2. Add the ground ginger-garlic paste,fry for 2 minutes.Add all the masala powders.
3. Stir fry,lower the heat to add yogurt 1 tbsp at a time until you use 1 cup,add salt and drained Jackfruit pieces.
4. Fry until done,cover and cook until oil shows on top on low heat.Add some water if necessary.
5. Pour the mixture into a deep bowl, and garnish with the cilantro.Serve with rotis.

Ripe Jackfruit-Coconut Pancakes:
Halasina Hannu Dose.These ripe Jackfruit and coconut dosas are very traditional in my other coffee estate(maternal) grandmother's home,ground in a stone grinder as they do in India.Delicious to eat as it is or with freshly plucked and squeezed honey from the honey comb as we do in the estates sometimes.(Yeah! You read that right!!)Sometimes,you even get a little bee(NOT the host of JFI)floating or sunk in the thick fresh honey!!Ahh..!!!;D


Ingredients: 1/2 cup rice (raw, uncooked),1/2 cup ripe jackfruit chopped, 1/2 cup sweetened coconut or fresh grated coconut, 1/4 tsp salt and sugar if you are using fresh coconut.Sweetened coconut already has sugar in it.
How to:
1. Soak the raw, uncooked rice for 2 hours, drain and grind coarsely in the blender.
2. Add ripe yellow jackfruit pieces, coconut and salt,sugar if you are using to rice in the blender, grind until you get a smooth batter.Add little water to make it run smoothly,but not too much,make like thick dosa batter.
3. Heat a non-stick griddle/tawa, brush some ghee and pour a ladle of the batter slightly thick,do not spread thin and cook until the bottom is golden.
4. Drizzle 1/2 tsp ghee or butter on top and flip to cook other side until golden.
5. Serve sprinkled with some sweetened coconut and honey (great bottled clover one for us!)on top of the dosas.Enjoy while it's warm.YUM!!!

My veggie Patch:
Well..this is what we have been doing, shopping and working on veggie patch for the last 3 weekends. Lot of planting and seeding is going on in the veggie patch and in numerous pots too.Phew!! But looking forward to all fruits of our labor this year too.Take a look at my last year's yield and the dish I made with the homegrown veggies!:))

That's it for JFI. Glad I made it and got to savor the Jackfruit after many years. But I am sooo tired of cooking Indian food now, I have to drop all Indian dishes for at least next week's post.My kids are complaining already!;D Have a fun weekend buddies,virtual hugs to you all!:)

i was wondering why u haven't posted any JFI entry in aroma and was about to ask u the same:) my eyes poped out when i saw ur halasina hannina dosa ashakka:) i am serious... ah!!! how i love that with spicy mango chuteny... slurp... do u know my amma pours batter directly into hot tawa and spreads the batter into very thin dosa using her hand. its a super crispy super tasty dosa and i just looooooooooooooooove it:) loved each n every dish and i am amazed to see the way u have made those kababs using canned jackfruit:) a tight hugs to u for posting these recipes.
so we can expect some international cuisine from next wednesday?

I have been checking your site for updates from 7.30 am today.It was worth the wait.You amaze me everytime with the variety of dishes u make.Jackfruit dosa & kababs are new to me.All the dishes look yummy.You do have a green thumb.Your garden looks green & beautiful.

Thank u so much for the recipes:) had picked up 3 cans of raw jackfruit at the grocery store, tried cooking one like meat, didn't like it that much( the tinned smell!), so was wondering what to do with the other two tins & here comes your recipe for kebabs, will try it & let you know:)

Paati, you are right.Somehow ginger-garlic masala doesn't go well with JF.South Indian masalas are better with it I think.Try that gravy recipe,tastes great with rice rotis:))

asha, this is like pan parag ad. ek mangne se 10 milte hain. :) so many dishes with those canned ones. i have some left and am going to try the kabobs. never had that. i know what you mean by too much indian food.

btw what is your opinion on bee chosing durian for AFAM? i say send her to kaalapani. :))

It is a treat for the jackfruit lovers.So many amazing recipes.
Your last years vegetables from the garden were too good . The white brinjal looks like an egg and the thai chili, so cute looking.Could not see this years veg garden. The slide was taking too long.Will check back later.

wow so many dishes with JF? Never had any of them before. First of all, do we get JF in US? If so, could you tell me where to look for it? All the dishes look DELICIOUS, but my vote is especially for Halasinhannu Dosas with coconut and honey. I'm really amazed by your creative mind. Oops, Forgot to mention your vegetable patch. Looks awesome. Where do you find time for everything?
One more thing, this week at publix supermarket I found a cauliflower which was green in color. It was not broccoli , the name was broccoflower. My hubby did not allow me to pick it as it was $3.40 or something. If you find it do try something with it. Then I can convince my hubby that I want to try your dish.

HI Asha! I just love to eat Jackfruit as it is. IN my neighbours backyard there was jackfruit tree and we used get hardly any one. You know they taste greater when we try hard to get them instead simply getting them.So here your efforts are showing off..great recipes.Thanks for sharing dear.I never tried her any jackfruit.Lets see..:-)

Wow Asha you got the JF and so many receipes great ! i lovedd those kababs the most. i am not sure wheather i make it for JF this time. A gidagalla nella nodi nodthane erbeku anistha idde. my methi again died not sure for what. After spouting well kelgade inda kappagi kolthi sathoithu do you know what might be the reason? i kept in sunny place and not watered much too may be the moisture here?:(

As always, your food is inspiring and delicious.

I can't wait to see what you reap from the veggie patch this year. I just clicked the link to see last year's and I was overwhelmed with emotion. Sappy I know but honestly, isn't it great to grow your own food and I completely understand the emotional attachment. I talk to my herbs and plants all the time and when I see them dry or anything I chastise myself for not taking good enough care of them.

Coming to the end of the last year's harvest post when you talked about just a few weeks more before summer ends, I felt a sharp pain of sorrow, can't believe that you have to wait until next year for all this to happen again. How I wish you could move to the Caribbean and live next door to me so that you can plant and I can help you reap :D.

Oh God! so many recipes at a time. I asked my colleague what to make for Jhiva-Jackfruit and she gave me the recipe for some curry and that is the same curry you made :-) So, I guess I will take it easy this time. I have to try these one at a time.

Asha d u know ur current post consists of something I REALLY LOVE? JACKFRUIT that is :) I like the Jacfruit curry and Sri Lankans eat that all the time. D u also know Breadfruit? Similar to Jackfruit but the curry is yummier.

Hi Meena,good to see you,hope you are back in US.I use to a lot of JF dishes in B'lore but I only got cans here.Try some of these,you will love it.Looking forward to more from you!:))

Shilpa,same here,after 20yrs, I got to taste these.Canned are okay,not like real thing.Try and go to a Vietnamese store,they have so many things even Indian stores donot keep.They have Lychees too!Any good Chinese store have it,hope you get it so I can cook more with your recipes:))

Roopa,innu time ide JFIge,try madinodu.Methi is the easiet for me to grow!Change the soil in the pot,I use Miracle grow here, seed and kepp it moist and put it in sunny spot.Sometimes I sprinkle Miracle grow granules if the soil is too old,and no nutrition in them.Try again with new soil,might work,good luck:)

OMG!! Cynthia,you are so sensitive girl!!:) I do love those so.I get the most harvest in July and August.I already see little Cherry tomatoes and Pimientos on the plants!
YUP!!! As life goes,everything has to end one day and in NC,it will be in September.I wish I was Caribbean too,we could grow all year long just like we used to do India!;D

Your friend must be from K'taka then! That gravy is delicious,try it home.You can make Pulao and Biryani with JF too.

Keshi,that is great to know that you like JF.Of course and South India have very similar dishes.Bread fruit is called Jeegujje in M'lore and I love it too.It has softer and pulpier than JF.I don't think I get Jeegujje here,it was hard to get JF!:D

Nanna bayalli neeru barutide. last year when i was in India my MIL got few halasinakai from hassan Then she prepared halasinakai saaru like normal veggie saaru and avarekalu+halasinakai bassaru. I loved it.
This time i will get the can one and will prepare those mouthwatering kababs and palya.

Amazing array of halsinkai dishes. Oh how much I miss mangoes and jackfruit here...Dosa and Genasale and payasa oh god I can still feel the aroma of halsina hannu spreading the entire house ....Ah!!! those were the days alwa. Loved the palya recipe and the kabab recipe a lot. I am gonna try your kababs soon and as you said the tinned ones don't taste or smell as good as fresh fruit but beggers can not be choosers alwa :-(. Your veggie garden looks beautiful and healthy.

Mamatha,Avarekalu Halasinakai saaru douds great.I will try:)) Canned JF is not that bad really,it doesn't have too much flavor and you don't need to for a long time since it's already soft in brine.Try maadi palya,tumba ruchiyarutte akki rotti jote:))

hey my ajji makes a jackfruit dish..i forgot its name now..its basically grinding rice, dipping jackfruit in it and frying it (its a typical mangalore dish)....but jack fruit na bidsodu kashta alva? what with it being waxy and all:)

Seema,I remember the aroma of ripe JF!! Canned ripe ones are pretty good than the raw ones.Make Halasinhannu dose,I bet your athe loves it.Palya,akki rotti jote tumba ruchiyagutte:))

Orchid,JF fries up there were dipped in rice flour but it's savory.You can use ripe ones to make it sweet.
Fresh Halasina Hannu sikkidre tane wax ella deal madbeku,illi canned sigutte ashte!I do miss the real thing ,wax and all:))

I don't think so Sally,not in UK and Ireland anyway.Jackfruits are mainly grown in tropical countries,may be like in Spain.They may have a different name,have to google and see.
Ripe ones are really good to eat as they are.You might get them in cans in any Indian store.Try and get the yellow ripe ones,kids might like the new flavor!:)

We have lots of jackfruits here and I remembered when I was little, we were so poor that we saved the seeds, boiled it in salt water and eat them, it was yummy :) Now I hardly see pple do that now.

I have yet to try jackfruit curry though and your introduction today makes me want to look out for one ekkekeke....

Hi Asha -- if you grew a Jackfruit Tree in that Veggie Patch you'd really have jackfruit in the box! Raised bed is looking wonderful full of okra and things. I am interested to see how many things you grow in containers. My soil is so poor, I am improving one spot at a time -- eggplant and squash in with spinach and cilantro in pots. More to go next week.

Here's my question -- why is canned raw jackfruit cut differently than canned sweet?? I love 'em both and never having had the fresh thing, I don't know what I'm missing :)

My favorites here are the sweet pancakes with coconut (complete with floating bees, I love it!) and of course, the *fried* kabobs and fritters :):)

Lotus,in my grandmother's place which is coffee Estate,JF are like backyard veg.So cooks in so many ways,these are just samples!;D Growing up in India was a great experience for me, my kids will never have that.Well..they have different life styles of course,which I never had!:)) Enjoy.

Hi Linda,I fill up the pots with Miracle grow soil,works well for yrs for me and every 3mnts,I sprinkle some MG pellets too.Usually I grow herbs,Plum and Cherry Tomatoes and peppers in pots.For Okras,giant Eggplants,patch is better.Bed is raised about 3feet,so roots go deeper,get lot of veggies.
Raw JF is the outer part of whole fruit.When we slice off the thorny skin and halve them,you see ripe yellow fruits inside with seeds in them surrounded by stringy pulp.
Raw JF is unripe with young immature fruit inside and when they mature,they turn yellow and pulp gets tougher and cannot use in cooking!They pluck young JF to cook and wait until they mature to get the yellow fruit.Hey,I went to back to India for a while Linda,thanks!:))
Next,nah.Pizza they get often,will make some good soup(s!);D

Nee,great to see you girl.After so many yrs of accepting that I don't get JF,I found canned ones!!Can you imagine the happiness,specially the ripe ones.Make that dosa,it's delicious and aromatic.Kababs are easy peasy to make.

Bottle gourd(not the Indian kind,but tastes the same) is called "Bird house gourd" with a rounder bottom as you can see in my last year's post.It's available in Lowe's or any grocery store in a small packet with 10-12 seeds.Plant atleast 4-6 at a time in good loose soil,just 1-2 seeds sprout and grow with support.I let it hug the side of the whole one side of the deck!:D
I saw Durian at coffee's blog,it looks JF.I think that's what they call it in Singapore,I am not sure.Here it's just called Jack fruit:)Good luck finding it and try some of these.

Do you know any site with useful info? I've never actually grown anything... How long does it take to get herbs and how long will they last?

Growing herbs and Tomatoes are the the easiest.You don't need a website,although you can google for them.
Buy the seeds in the supermarket and follow the directions on the back of the packet.Some are annuals,die when it gets cold again ,some are hardy Perennials ,come up on their own every year like Mint.Canadian wehter is different from here,so you will have to wait until temp gets at least up to 75F.
Sow the herbs in a pot or soil bed,soil needs to be loose and got to add fertilizers every 3 monts.
